Mashed Sweet Potatoes
Mashed Sweet Potatoes is an moderately easy dinner. Made with 6 sweet potatoes, 1/4 c. sugar, 1 stick margarine, softened, 2/3 c. milk and 2 tbsp. lemon juice, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.
Place the sweet potatoes in a large pot. Cover with water about 4-inches over the top of the potatoes.
Bring to a boil over medium-high heat. Cook 30 minutes.
When slightly cooled, peel potatoes.
Place in a large bowl.
Mash well or use a mixer until all lumps are gone.
Add remaining ingredients and mix well. Place potatoes in a buttered casserole dish (2 to 3 quarts). Bake in preheated 350Β° oven for 25 minutes.
