Mashed Potato Cakes is an easy dinner. Made with 2 c. mashed potatoes (leftover potatoes), 1 egg, seasoning and crisco for pan frying, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.

Mix potatoes and slightly beaten egg together.
Season to taste.
Shape into round flat cakes about 3/4-inch thick.
Melt enough Crisco into heavy frying pan to cover the bottom well. When hot, put cake in and brown on one side.
Turn with spatula and brown cakes on the other side.
