Mary's Candied Fruit Cake
Mary'S Candied Fruit Cake is an moderately easy dinner. Made with 2 c. flour, 2 tsp. baking powder, 1/4 tsp. salt, 1 lb. candied pineapple, coarsely cut and 1 lb. whole candied cherries, this recipe delivers authentic, satisfying flavors. Bursting with flavor in every bite.

Combine flour, baking powder and salt in large bowl. Add pineapple, cherries and dates. Mix with hands until well incorporated. Beat 4 eggs until frothy; gradually beat in 1 cup sugar. Add to fruit mixture; mix well. Add pecans and mix well. Grease loaf pans and pack mixture in very firmly.
Bake at 275Β° for 1 hour. Don't overbake. Turn out on rack and cool.
