Marinated Carrots
Marinated Carrots is an moderately easy dinner. Made with 1 bunch large carrots, 2 cloves garlic, sliced, 1/2 tsp. salt, 1/2 tsp. pepper and 1/4 c. olive oil, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Scrape carrots and cut into thick slices.
Boil carrots in water 10 minutes, or until tender, taking care not to overcook. Drain well and place in bowl with garlic, salt, pepper, oil, vinegar and oregano; stir and mix well.
Let stand in marinade 12 hours before serving.
When ready to serve, unmold on large serving plate.
Surround with pineapple chunks, mandarin oranges or any fruit combination.
Place fruit in the center, too.
