Mandarin Spinach Salad
Mandarin Spinach Salad is an moderately easy dinner. Made with 1/2 c. sliced almonds, 2 tbsp. plus 2 tsp. sugar, 1/2 bunch romaine, 1/2 bunch spinach (i use all spinach) and 4 stalks celery, sliced small, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Cook almonds and sugar over low heat, stirring constantly. Cool on wax paper and break apart. Store at room temperature. Combine remaining ingredients.
Toss with Sweet and Sour Dressing.
