Mandarin Orange Sweet Potato Salad
Mandarin Orange Sweet Potato Salad is an moderately easy dinner. Made with 3 to 4 lb. sweet potatoes, 1 c. packed brown sugar, 1 1/2 tbsp. cornstarch, 1/4 tsp. salt and 1 1/2 tsp. ground cinnamon, this recipe delivers authentic, satisfying flavors. Packed with nutrients and delicious flavors.
Preheat oven to 350Β°.
Boil potatoes in jackets and set aside. Combine sugar, cornstarch, salt and cinnamon in a saucepan.
Add apricot nectar and orange rind.
Bring to a boil, stirring constantly.
Remove from heat.
Stir in Butter Buds.
Pour over sliced, peeled sweet potatoes and Mandarin oranges that have been placed in a casserole dish sprayed with a nonfat cooking spray. Sprinkle Grape-Nuts cereal on top.
Bake for 25 minutes.
