Mama's Rice Pudding
Mama'S Rice Pudding is an moderately easy dinner. Made with 3/4 c. rice (uncooked), 1 1/2 c. water, dash of salt, 2 tbsp. butter or margarine and 2 eggs, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.
Place rice in saucepan with water, 2 tablespoons butter and a dash salt.
Bring to a quick boil.
Cover saucepan and allow rice to simmer 15 minutes or until rice has absorbed all the moisture.
In a mixing bowl, lightly beat 2 eggs.
Add sugar, milk, butter and vanilla.
Stir well.
Add this mixture to the rice.
Stir well.
Bake in an 8 x 8-inch baking dish in a 350Β° oven for 15 minutes.
