Mama's Chicken Salad
Mama'S Chicken Salad is an moderately easy dinner. Made with 2 1/2 lb. chicken, 4 boiled eggs, chopped small, 1/2 c. duke's mayonnaise, dash of salt and pepper and 1/2 c. sweet pickles, diced, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.
Cook chicken until tender and starts to fall off bone.
Remove from heat and let cool.
Remove the bones and gristle.
Cut meat into 1/2-inch cubes.
Mix with celery, eggs and pickles; add salt and pepper.
Mix mayonnaise and salad dressing together very well. Mix this into the first mixture.
If you want to add a touch to that, add 1/2 cup mellow apples (cut fine).
