Macaroon Cupcakes
Macaroon Cupcakes is an moderately easy dinner. Made with 4 egg whites, pinch of salt, 3/4 c. 10x sugar, 1 1/2 c. flaked coconut and 1/2 c. blanched almonds, chopped, this recipe delivers authentic, satisfying flavors. Perfect for family dinners and special occasions.

Beat egg whites with salt until soft peaks form.
Slowly add 1/2 cup of sugar, beating until stiff, shiny peaks form.
In separate bowl, combine coconut, 1/4 cup sugar, almonds, flour and flavoring.
Mix well.
Fold coconut mixture into egg whites. Spoon into 12 paper lined muffin tins.
Bake in preheated 350Β° oven for 25 minutes or until a little crusty.
Cool on rack.
