Luba's Raspberry Sweet Potato Casserole
Luba'S Raspberry Sweet Potato Casserole is an easy dinner. Made with 8 medium sweet potatoes or yams, 1 (10 oz.) pkg. raspberries (frozen), 1/2 c. brown sugar, 1/2 c. butter or margarine and 2 tbsp. milk, this recipe delivers authentic, satisfying flavors. Peel and cut up potatoes.
Cook in boiling water until soft. Mash potatoes; add butter, brown sugar and milk and mix.
(Can be made ahead of time up to this point and refrigerated.)
Put in a 350Β° oven to heat, covered, approximately 20 to 30 minutes.
Last 10 minutes put raspberries (defrosted) on top; cover and return to oven for 5 to 10 minutes (until raspberries are warm).
