Low Calorie Company Casserole
Low Calorie Company Casserole is an moderately easy dinner. Made with 3 c. cooked long grain wild rice (6 oz. box), 2 tbsp. diet margarine, 3 tbsp. plus 1 tsp. cornstarch, 1 1/2 c. evaporated skim milk and 12 oz. chicken broth, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.
In pan, mix cornstarch, salt and pepper.
Stir in milk and broth until smooth.
Add margarine and onion, stirring constantly. Bring to a boil over medium heat.
Boil 1 minute or until thick. Stir in chicken, green pepper, parsley and cooked rice.
Place in 2-quart casserole dish, sprayed with Pam.
Bake, uncovered, at 375Β° for 30 minutes.
