Low Calorie Cheesecake is an impressive dinner. Made with 2 pkg. unflavored gelatin, 1 c. skim milk, 4 eggs, separated, 3/4 c. sugar and 1 tbsp. lime juice, this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.

Sprinkle gelatin over milk in top of double boiler. Beat in egg yolks. Cook and stir until gelatin dissolves and mixture thickens slightly (about 5 minutes).
Remove from heat.
Stir in sugar, lime juice, vanilla, almond and salt. Set aside.
