Linda's Squash Casserole
Linda'S Squash Casserole is an moderately easy dinner. Made with 8 yellow squash, sliced, 1/2 medium onion, chopped, 1 stick margarine, 1 c. grated cheddar cheese (i use the mild) and 1 c. grated velveeta cheese (i use processed american), this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.
Boil the squash and onion in small amount of water until tender.
Drain well; add 1 stick of margarine, the cheeses, and the soup; mix well.
Pour into greased casserole.
Mix together the crackers with melted margarine; pour on top of the squash mixture.
Bake 25 to 30 minutes at 350 degrees.
