Lime Meringue Pie
Lime Meringue Pie is an moderately easy dinner. Made with 4 tbsp. cornstarch, 3/4 c. sugar, 1/4 tsp. salt, 1 1/4 c. water and 3 eggs, separated, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.
Mix cornstarch, sugar, salt and water.
Cook and stir until thick and transparent. Separate the eggs and put whites aside. Add cornstarch mixture to egg yolks.
Cook 3 minutes.
Add butter, grated lime rind and lime juice.
Pour into the pie shell. Top with meringue made from the 3 egg whites and 6 tablespoons sugar beaten until stiff.
Bake a few minutes to brown.
