Light 'n Lean Lasagna
Light 'N Lean Lasagna is an moderately easy dinner. Made with 1 (10 oz.) pkg. cooked and drained spinach, 2 c. ricotta or cottage cheese, 2 c. shredded mozzarella cheese, divided, 1/2 c. grated parmesan cheese, divided and 2 eggs, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.

In large bowl, combine spinach, Ricotta or cottage cheese, 1 cup Mozzarella cheese and 1/4 cup Parmesan cheese.
Combine eggs, thyme, basil, nutmeg and pepper; beat slightly.
Pour into spinach-cheese mixture and mix well.
Set aside.
