Light Gingerbread
Light Gingerbread is an moderately easy dinner. Made with 2 c. flour, 1 c. sugar, 1/2 c. shortening, 1/2 tsp. cinnamon and 1/2 tsp. ginger, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Mix well with pastry blender the flour, sugar, shortening, cinnamon and ginger.
Save out 1/2 cup for topping.
Add to flour mixture the egg, molasses, sour milk, soda and salt.
Mix together.
Pour into greased 9 x 9-inch pan.
Sprinkle with topping.
Bake for 35 to 45 minutes at 350Β°.
