Lemon Roasted Chicken
Lemon Roasted Chicken is an easy dinner. Made with 8 chicken quarters, 1 c. dijon-style mustard, 1/2 c. apricot jam and 1/4 c. lemon juice, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.

Preheat oven to 375Β°.
Pat chicken dry with paper towels. Place in roasting pan in oven.
Roast 40 minutes or until about 3/4 done.
Remove from oven.
Combine mustard, jam and lemon juice in small bowl.
Blend well.
Brush mustard mixture on both sides of chicken.
Bake, skin side up, about 10 to 15 minutes more or until golden brown.
Serve hot or cold.
Remaining sauce can be used for dipping.
Great for picnic!
