Lemon Puff Pudding
Lemon Puff Pudding is an moderately easy dinner. Made with 3 tbsp. margarine, 1 c. sugar, 1/4 c. all-purpose flour, 3 eggs, separated and 2 tsp. grated rind, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.
Cream butter, 1/2 cup of sugar and flour in mixing bowl.
Add egg yolks; beat well.
Stir in lemon juice, rind and milk.
Add salt to egg whites and beat until stiff.
Gradually beat in remaining 1/2 cup sugar; fold into first mixture.
Pour into buttered baking dish; set in shallow pan of water 1-inch deep. Bake at 325Β° for 1 hour.
