Lemon Pudding Cake
Lemon Pudding Cake is an moderately easy dinner. Made with 4 egg yolks, 1/3 c. lemon juice, 1 tsp. lemon rind (optional), 1 tbsp. melted butter and 1 1/2 c. sugar, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.
Beat and mix well the egg yolks, lemon juice, rind and butter; set aside. Mix sugar, flour and salt. Measure milk. Whip egg whites. Add sugar mixture alternately with the milk. Fold into beaten egg whites. Pour into 8-inch square pan. Place this pan in a pan of water. Bake for 45 minutes in 350Β° oven. Pudding will be in the bottom of pan. Turn over when served and
Top with Cool Whip.
