Lemon Poppy Muffins
Lemon Poppy Muffins is an moderately easy dinner. Made with 1 c. margarine, 1 3/4 c. sugar, divided, 1 (8 oz.) pkg. cream cheese, 5 eggs, separated and 3/4 c. lemon juice, this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.

Preheat oven to 350Β°.
Beat margarine, 1 1/2 cups sugar and cream cheese at medium speed with mixer until light and fluffy. Blend in egg yolks and lemon juice.
Add combined flour, baking powder and baking soda and mix well.
Beat in poppy seed and peel. Set aside.
Beat egg whites until foamy.
Gradually add reserved 1/4 cup sugar, beating until soft peaks form.
Fold egg whites into batter.
Pour into greased muffin pan.
Bake 55 minutes or until toothpick inserted in center comes out clean.
Cool and remove from pan.
