Lemon Pie
Lemon Pie is an moderately easy dinner. Made with 1 1/2 c. sugar, 2 tbsp. cornstarch, 1 1/2 c. hot water, 3 eggs and 1/3 c. lemon juice, this recipe delivers authentic, satisfying flavors. Perfect for family dinners and special occasions.

Combine sugar and cornstarch.
Add water slowly.
Cook over medium heat beating constantly until it starts to boil.
Add 3 beaten egg yolks and cook until thick.
Remove from heat.
Add lemon juice, lemon rind and butter.
Pour in 8-inch pie crust.
Make meringue and pour over pie filling.
Bake until done.
