Lemon Pecan Cake
Lemon Pecan Cake is an moderately easy dinner. Made with 3/4 lb. butter, 1 lb. sugar (2 1/4 c.), 1 lb. flour (4 c.), 6 eggs, beaten and 1 tsp. baking powder, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Dust raisins and nuts with little flour.
Cream butter and sugar.
Add beaten eggs a little at a time.
Add alternately lemon extract, flour, nuts and raisins.
Cook at 325Β° for 1 1/4 hours. You can make a large cake or in loaves.
I like to make this at Christmas.
