Lemon Muffins
Lemon Muffins is an moderately easy dinner. Made with 1 3/4 c. flour, 1 tsp. baking powder, 3/4 tsp. baking soda, 1/4 tsp. salt and 3/4 c. sugar, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.

Combine first 6 ingredients in a large bowl; make a well in center of mixture and set aside.
Combine egg, yogurt, butter and lemon juice; stir well.
Add to dry ingredients; stir until just moistened.
Spoon batter into greased muffin pans, filling 3/4 full.
Bake at 400Β° for 20 minutes or until lightly browned.
Cool in pans for 5 minutes.
Remove from pans and, while warm, prick tops with a toothpick; pour glaze over muffins.
Yield: 16 muffins.
