*Lemon Meringue Pie
*Lemon Meringue Pie is an moderately easy dinner. Made with 7 tbsp. cornstarch, 1 1/2 c. sugar, 1/2 tsp. salt, 2 c. boiling water and 3 eggs, separated, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

In the top of a double boiler, combine cornstarch, sugar and salt.
Add water.
Cook until thick, stirring constantly.
Cover and place over boiling water for 10 minutes.
Beat egg yolks slightly; add a little hot mixture.
Stir and pour back into pan. Cook for 2 minutes more, stirring constantly.
Remove from heat. Add lemon juice, butter and grated peel.
Cool to room temperature.
Do not stir.
Pour into baked, cool shell.
