Lemon Meringue Pie
Lemon Meringue Pie is an moderately easy dinner. Made with 1 1/2 c. sugar, 1 dash of salt, 4 medium size eggs, separated, 1/4 c. plus 2 tbsp. lemon juice and 1/2 c. flour, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Combine 1 1/2 cups sugar in well beaten egg yolks.
Add flour, salt and 1/2 cup water in mixing bowl.
Convert to cooking pan and remaining water.
Cook on low heat or in double boiler.
Cook until it thickens.
Add lemon juice and grated lemon rind.
Cool slightly and pour mixture into pie shell.
