Lemon Icebox Pie
Lemon Icebox Pie is an moderately easy dinner. Made with crushed vanilla wafers (approximately 15), 1/2 stick oleo, 1 can eagle brand milk, 3 eggs (at room temperature), separated and 1/2 c. lemon juice, this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.

Press crushed wafers and melted oleo in pie pan and line whole vanilla wafers around edge.
Beat egg yolks until light yellow. Add milk and mix well.
Add lemon juice.
It may be runny, but will thicken when refrigerated.
Beat egg whites, salt and cream of tartar until stiff.
While beating, add sugar, one tablespoon at a time.
(Do not overbeat; it will cause the egg whites to go flat.)
