Lemon Fluff Pie is an moderately easy dinner. Made with 2 c. graham crackers, crushed, 1 c. skim pet milk (large can), 1/2 c. lemon juice and rind, 1 pkg. lemon jell-o and 1 c. hot water, this recipe delivers authentic, satisfying flavors. Perfect for family dinners and special occasions.
Mix a cup of hot water with a package of Jell-O.
Add juice and rind; let cool but not set.
Beat milk until stiff (will not peak like egg whites but will be light and fluffy).
Add sugar or Equal.
Add Jell-O mixture and beat stiff again.
Pour into graham cracker crust.
Sprinkle top with graham cracker crumbs and chill.
