Lemon Curd is an easy dinner. Made with 6 eggs, 2 c. sugar, juice of 4 lemons and 1/2 c. butter or margarine, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.

Beat eggs; add sugar and then strained lemon juice.
Cook in double boiler or in microwave bowl in microwave oven.
Add butter, cut in small pieces, as soon as mixture is hot.
Cook until thick.
Cool and store in refrigerator.
