Lemon Blueberry Bread
Lemon Blueberry Bread is an impressive dinner. Made with 1/3 c. butter or margarine, melted, 1 c. sugar, 3 tbsp. lemon juice, 2 eggs and 1 1/2 c. all-purpose flour, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.
Beat butter, sugar, 3 tablespoons lemon juice and eggs. Combine flour, baking powder and salt; stir into egg mixture alternately with milk.
Fold in lemon peel, nuts and blueberries. Pour into greased loaf pan.
Bake 60 to 70 minutes (until bread tests done) at 350Β°.
Cool in pan 10 minutes.
Remove from pan. Prepare glaze; combine 2 tablespoons lemon juice and confectioner sugar.
Drizzle over bread.
Cool on rack.
