Lemon Bars
Lemon Bars is an moderately easy dinner. Made with 2 c. flour, 1 c. butter, 1/2 c. confectioners sugar, 4 eggs and 2 c. sugar, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.
Mix flour with butter and confectioners sugar until it holds together.
Press into 9 x 12-inch baking pan and bake at 350° for about 8 to 10 minutes.
Beat together eggs, granulated sugar, lemon juice and salt.
Fold in 4 to 4 1/2 tablespoons flour and baking powder.
Pour over hot crust and bake 20 to 25 minutes or until set at 350°.
Sprinkle with confectioners sugar while warm. Cut while warm.
Use jellyroll pan if thinner squares are desired.
