Leftover Turkey Pie
Leftover Turkey Pie is an moderately easy dinner. Made with 4 potatoes, diced, 2 carrots, sliced, 1 stalk celery, diced, 1 onion, chopped and 1/2 c. bisquick, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Grease 2-quart baking dish with butter generously.
Cook first four ingredients together.
Mix Bisquick, flour, parsley and margarine together.
Beat eggs; season with salt and pepper and mix with leftover mashed potatoes.
Add to Bisquick mixture and work together.
Mixture will be sticky.
Spoon mixture into dish and using the back of spoon, pat it into bottom and sides of dish. Save some mixture for top.
Put cold turkey, gravy and peas in dish; add potatoes, carrots, celery and onion.
Put more turkey and gravy in center.
Spoon Bisquick mixture around sides, sealing well.
Let circle in center open.
Bake at 375° to 400° for 1 hour.
