Layered Spinach Salad
Layered Spinach Salad is an moderately easy dinner. Made with 1/2 c. grated parmesan cheese, 3 to 4 slices bacon, cooked and crumbled, 10 oz. frozen peas, thawed, 1/2 c. lite mayonnaise and 1/2 c. low-fat plain yogurt, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.
Combine cheese and bacon in a bowl.
In a large salad bowl, alternate spinach, cheese mixture, mushrooms, onions and peas. Mix mayonnaise and yogurt; pour or spread over top of salad. Last, sprinkle a little more grated cheese over the top.
Make day before and store, covered, in refrigerator.
