Layered Mixed Vegetable Salad
Layered Mixed Vegetable Salad is an moderately easy dinner. Made with 1 head lettuce, 1/2 c. chopped green or red onion, 1/2 c. (1 stalk) celery, 1/2 c. (1 small) green pepper and 10 oz. pkg. (1 1/2 c.) frozen peas, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Tear lettuce into bite-size pieces.
In a large bowl or 13 x 9-inch pan, layer lettuce and onion.
Spoon 1/2 cup mayonnaise evenly over top.
Layer chopped celery next.
Then layer diced green pepper.
Thaw and drain peas.
Layer peas.
Spread remaining mayonnaise over top.
Sprinkle sugar and cheese.
Fry the bacon slices and then drain and crumble.
Add bacon over top.
Cover and refrigerate at least 8 hours.
If desired, add drained water chestnuts.
Toss before serving.
