Lady Di's Cheese Rice Casserole
Lady Di'S Cheese Rice Casserole is an moderately easy dinner. Made with 1/2 lb. monterey jack cheese, cut in strips, 1 3/4 c. sour cream, 1 (4 oz.) can green chilies, chopped, 1/2 c. sharp cheddar cheese, grated and 2 c. rice, cooked, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.
In a large mixing bowl, combine sour cream, chilies, salt and pepper; mix well.
In buttered casserole dish, layer rice, sour cream mixture and cheese strips.
Top with rice.
Bake in 350Β° oven for 30 minutes.
Sprinkle with Cheddar cheese during the last 5 minutes; cook until cheese is melted.
