King Ranch Chicken
King Ranch Chicken is an moderately easy dinner. Made with 1 c. green pepper, chopped, 1 c. onion, chopped, 1/2 c. margarine or butter, 2 cans cream of chicken soup and 2 cans cream of mushroom soup, this recipe delivers authentic, satisfying flavors. Perfect for family dinners and special occasions.
Stew chicken with salt, pepper and bay leaf.
After cooking, debone chicken and cut into bite-sized pieces.
In a large saucepan, saute onion and green pepper in margarine until tender. Stir in soups and Ro-Tel.
In a 9 x 13 inch baking dish, layer tortillas, chicken, soup and cheese.
Repeat layers 3 times, ending with cheese.
Bake at 325Β° for 45 minutes or until hot and bubbly and cheese is lightly browned.
Can be frozen before or after cooking.
Serves 10 to 12.
