Kenyan Stew
Kenyan Stew is an moderately easy dinner. Made with 1/4 c. finely chopped onion, 1 1/2 c. finely chopped tomatoes, 1 tbsp. oil, 2 c. chopped potatoes and 2 c. chopped carrots, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.

Chop vegetables.
Place potatoes and carrots in water to prevent darkening.
Heat oil in pan which soup will be cooked.
Fry onions until brown.
Add tomatoes and cook on medium until tender.
Add potatoes and carrots (remove from water) to onions and tomatoes.
Add water, salt, chili powder and any optional ingredients desired.
Simmer 30 minutes.
Serve with chapatis or Ugali.
