Kentucky Pound Cake
Kentucky Pound Cake is an moderately easy dinner. Made with 2 1/2 c. self-rising flour, 2 c. sugar, 4 egg yolks, 1 (20 oz.) crushed pineapple, drained (save juice) and 1 1/2 c. vegetable oil, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.
Combine sugar, egg yolks, oil and hot water and mix well.
Add flour and pineapple to creamed mixture.
Fold in beaten egg whites.
Add nuts and coconut.
Pour into greased tube pan.
Bake 1 1/2 hours at 350Β°. Mix 1/2 pound confectioners sugar and 1 cup pineapple juice.
Pour over hot cake in pan.
Turn out when cool.
