Kay Lynn's Mexican Layered Casserole
Kay Lynn'S Mexican Layered Casserole is an moderately easy dinner. Made with 1 or 2 lb. ground beef, browned and crumbled (and pepper the beef well), 1 lb. velveeta cheese, cubed, 5 white flour tortillas, 1 can golden mushroom soup (undiluted) and 3/4 can ro-tel, this recipe delivers authentic, satisfying flavors. Perfect for family dinners and special occasions.
In a medium-size bowl, mix soup, Ro-Tel water, onion and the cubed Velveeta.
Mix well.
In a baking dish, place your first layer of tortillas, then a layer of the beef.
Then a layer of the mix.
Repeat until you've used up the ingredients.
Bake in a medium oven for 30 minutes.
