"Just in Case" Pie
"Just In Case" Pie is an moderately easy dinner. Made with 1 ready-made chocolate-crumb pie crust, 1 env. unflavored gelatin, 1/4 c. cold water, 2 c. heavy cream, divided and 1 c. semi-sweet chocolate chips, this recipe delivers authentic, satisfying flavors. Prepare crust as directed.
Sprinkle gelatin over water in small saucepan; let stand one minute.
Stir over low heat until gelatin is dissolved, about 3 minutes.
Stir in one cup of the heavy cream.
Heat to a boil.
Then pour into a blender.
Add the chips and process until the chips are melted, about one minute. When processing, add another 1/2 cup of cream, eggs and vanilla; process until well blended.
Pour mixture into large bowl, chill for 15 minutes until thick.
