Joe's Medley of Julienne Veggies
Joe'S Medley Of Julienne Veggies is an moderately easy dinner. Made with 3 small (6 to 7-inch) zucchini, 1 small (6 to 7-inch) yellow squash, 1/4 lb. or 1 frozen (10 oz.) pea pods, 1 large sweet red pepper and 1 small green pepper, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.

Wash and clean veggies.
Peel carrot, zucchini and squash. Julienne all veggies (cut lengthwise into 1/4 x 1/4 x 7-inch long strips).
In a large frying pan, cover bottom with olive oil (I only use virgin olive oil).
Heat and when hot, add veggies. Stir-fry for about 5 to 8 minutes.
Cover for a few minutes. Sprinkle with salt and pepper to taste.
Serve.
They should be crispy and crunchy.
A very colorful meal.
