Jicama Slaw
Jicama Slaw is an moderately easy dinner. Made with 2 cloves garlic, unpeeled, 1/4 c. apple cider or juice, 1 1/2 tbsp. olive oil, 1 tbsp. cider vinegar and 2 tsp. dijon mustard, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.

Heat a dry heavy skillet, preferably cast iron over medium heat.
Add garlic cloves and roast, turning occasionally with tongs until blackened in spots and soft (about 10 minutes).
Peel, removing tough ends.
In blender or food processor, combine garlic, apple cider, oil, vinegar and mustard.
Process until smooth.
Season with salt and pepper.
In salad bowl, combine jicama, carrots and apples.
Add dressing and toss to coat.
