Jellied Guacamole Salad
Jellied Guacamole Salad is an moderately easy dinner. Made with 2 pkg. plain gelatin, 1 c. cold water, 2 c. boiling water, 1/2 c. cooked shrimp and 4 c. mashed avocado, this recipe delivers authentic, satisfying flavors. Bursting with flavor in every bite.

Soften gelatin in cold water; dissolve in boiling water.
Pour a little clear gelatin in bottom of mold; arrange shrimp in it and chill until firm (shrimp may be marinated in French dressing for a few hours beforehand; then drain well).
Mash avocado with lemon juice; add seasonings and remaining gelatin.
Pour mixture on top of firm shrimp layer.
Chill until firm.
Unmold on serving dish. Garnish with lettuce, tomato and cucumber wedges.
Serve with mayonnaise.
Serves 10 to 12.
