Japanese Fruit Cake
Japanese Fruit Cake is an impressive dinner. Made with 3 1/2 c. sifted flour, 1/4 tsp. salt, 3 tsp. baking powder, 1 c. shortening and 2 c. sugar, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.
Sift together flour, salt and baking powder.
Set aside.
Work with spoon the shortening until soft.
Add sugar gradually, mixing well after each addition!
Beat until light and fluffy.
Add eggs, one at a time.
Beat well after each addition.
Add vanilla.
Beat well.
Add dry ingredients alternately with milk.
Beat well after each addition.
Pour 1/3 of batter into one layer pan.
Set side. To remaining batter, add cinnamon, ground cloves and allspice. Beat well.
Fold in raisins and chopped pecans.
Mix well.
Turn batter into two remaining pans.
Bake 3 layers in 375Β° oven, about 35 minutes.
