Jamaican Rice and Peas
Jamaican Rice And Peas is an moderately easy dinner. Made with 1 grated coconut, 1 1/2 c. red kidney beans, 1 sprig thyme, 1 green onion and 1 hot pepper, this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.
Make 1 quart coconut adding water to 1 grated coconut.
Strain through sieve.
Wash red beans. Add to milk with 2 of garlic.
Boil until tender.
Add thyme, hot pepper and green onion; salt taste.
Simmer for 2 minutes. Add washed rice (liquid should be about 1 inch above rice). to a boil, and cook on low heat until liquid disappears and cooked.
Serve with Chicken Fricassee and boiled or fried plantain.
