Jalapeño Shrimp Saute
Jalapeño Shrimp Saute is an moderately easy dinner. Made with 2 sticks unsalted butter, 2 medium fresh jalapeños, stemmed and minced, 3 medium garlic cloves, peeled and minced, 1 1/2 lb. unpeeled medium shrimp and 1/2 c. chopped scallions (including green tops), this recipe delivers authentic, satisfying flavors. In a large skillet over medium heat, melt butter.
When it foams, add the jalapeños and garlic.
Lower the heat and cook, stirring occasionally, for 5 minutes.
Add the shrimp and scallions; raise the heat to high and cook, tossing and stirring, until the shrimp turn a bright pink-orange and have curled, about 5 minutes.
With a slotted spoon, divide the shrimp among individual serving dishes.
Add the wine and Worcestershire sauce to the skillet; bring to a boil and cook, stirring, for 3 minutes. Stir in the salt and pour equal amounts of the sauce over the shrimp in each dish.
Serve at once.
