Jalapeño Jelly
Jalapeño Jelly is an moderately easy dinner. Made with 3/4 c. seeded and ground green peppers, 1/2 c. seeded and ground jalapeño chiles, 6 c. sugar, 1 1/2 c. cider vinegar and 1 (6 oz.) bottle liquid pectin, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Mix green peppers, chiles, sugar and vinegar and bring to rolling boil.
Boil 1 minute.
Remove from heat and allow to cool slightly.
Add pectin and 4 or 5 drops food coloring.
Mix well. Strain into hot sterilized jars and seal.
Makes about 6 (half pints).
