Jalapeño Hush Puppies
Jalapeño Hush Puppies is an moderately easy dinner. Made with 1 c. yellow cornmeal, 1/2 tsp. salt, 1/4 tsp. pepper, 1/4 c. chopped onion and 1 large fresh jalapeño pepper, seeded and chopped, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.
Combine cornmeal, salt and pepper.
Stir in the onion, jalapeño pepper and buttermilk just until combined.
Let stand for a few minutes to thicken.
Drop hush puppies, using two spoons, a few at a time, into the hot (365°) oil.
Fry for 3 to 4 minutes or until golden, turning once.
Drain on paper towels.
Serve hush puppies warm with catfish.
