Italian Zucchini Casserole
Italian Zucchini Casserole is an moderately easy dinner. Made with 4 c. shredded zucchini, 1 c. chopped onion, 1/2 c. diet margarine, 1/2 tsp. pepper and 2 eggs, well beaten, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Saute zucchini with onion and margarine in skillet for 10 minutes.
Add pepper; mix well.
Mix eggs and cheese in bowl. Stir in zucchini mixture.
Line 10-inch pie plate or casserole dish with crescent roll dough, pressing edges to seal.
Spread with mustard.
Spoon zucchini mixture into crust.
Bake at 375Β° for 18 to 20 minutes or until knife inserted in center comes out clean.
