Italian Wedding Soup
Italian Wedding Soup is an moderately easy dinner. Made with 4 chicken breasts, skinned, 3 qt. water, salt to taste, 1/2 tsp. pepper and 1 medium chopped onion, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Wash chicken; place in large pot with water and boil.
Remove foam that forms.
Add salt, pepper, onion, celery and carrots. Cook 2 hours or until meat is tender.
Remove chicken and shred. Add spinach and already cooked pasta.
Add shredded chicken and tomatoes.
Cook 1/2 hour longer.
More water may be added if necessary.
Add cheese, garnish with parsley and serve while hot.
