In a large covered skillet saute sausage and onions until sausage is cooked. Add sliced potatoes and sliced zucchini.
Add butter or olive oil and sprinkle Italian seasoning on top. Cover and cook over low heat until potatoes are tender, about 30 to 40 minutes.
Add water if needed.
